Shortcross Gin & Tonic Cake with Lemon Glaze

A must try for any gin lover! This light fluffy cake is the perfect indulgence for a weekend at home.

Syrup glaze Ingredients

  • 30ml – Shortcross Gin
  • Juice of 1 Lemon
  • 30ml – tonic water
  • 250g – Sugar

Syrup Glaze Method

  1. Add all ingredients together in a saucepan and bring to the boil.
  2. Allow the mixture to infuse and the pour over the cake!

Ingredients

  • 350g - Sugar
  • 350g - Butter
  • 350g - Self raising flour
  • 6 - Eggs beaten
  • 100ml - Shortcross Classic Gin

Method

  • Pre-heat oven to 180°C and flour a cake tin
  • Combine sugar and butter until pale, then add flour
  • In a seperate bowl, add eggs and 100ml of Shortcross Classic Gin
  • Add the egg mixture to the flour and fold together
  • Place mixture in cake tin and bake for 30-40 mins
  • Once baked, pierce holes into top of the cake and leave to cool
